I don’t know of many people that don’t appreciate something handmade and also don’t love cookies.
With yesterday being Thanksgiving in the U.S I thought it would be fun to include a little kit for you to make cookies and give them to some one as a little ‘thank you’. (cookie ingredients not included in the Lollipop Kits….just making that clear here : ) )
I’ve included a recipe for oatmeal cookies that’s loved in our house. The thing I love about these cookies is that you can add extra yummies. Today I added raisins, but other dried fruit can be added and also chocolate chips, m&m’s …..
Here’s what you need to bake the cookies:
Oatmeal Cookies
3/4 cup butter
1 1/3 cups light brown sugar
1 egg
4 tbsp water
4 1/3 cups rolled oats
1 cup plain flour
pinch of salt
1/2 tsp bicarbonate of soda (baking soda)
Star by preheating the oven 180c/350f /gas 4
Beat butter & sugar until creamy.
Beat in the egg & water until smooth.
In a separate bowl mix oats, flour, salt & baking soda. Then mix together with the wet mixture. If a little dry add a little more water. Add raisins or anything else at this point if you wish.
Grease cookie sheet and spoon a tablespoon of mixture at a time on to the sheets.
Bake for about 15 mins or until golden.
Remove them from the cookie sheet once ready and leave to cool.
If you are wrapping some for someone else, you can use the little bag and tag in your kit.
