This has been a favourite recipe of mine for years and years. One of those cakes that just gets thrown together, it’s quick and a good lunchbox filler or after school snack for the kids. You can make it without the chocolate and without the sugar too. Plus it’s a great way to use up the bananas when they start to go over and the kids moan as they don’t want to eat them.
Here’s how I make it:
Ingredients:
200g Self Raising Flour
50g Soft Margarine
1 Egg
50g Caster Sugar (or I add a good tablespoon of honey to replace the sugar)
3 Ripe Bananas (the riper the bananas the sweeter they become which also adds a natural sweetener to the cake)
A Little Milk
Half a cup of choccie chips (optional)
To Make:
– Preheat the oven to 180c / 350f / Gas 4
– Mash the bananas in a bowl and place to one side.
– In a large mixing bowl add the flour and margarine and rub with your fingers until it resembles breadcrumbs.
– Add the egg, mashed bananas and sugar (or honey).
– If the mixture is too dry add a splash of milk.
– Add the choccie chips if you wish.
– Grease a loaf tin and spoon in the cake mixture.
Bake for about 45mins until golden brown on top.
For an extra treat we like to eat our’s whilst still warm and spread it with nutella.
So naughty, but so yummy!!
